Spinach Rice Recipe

I've seen Spinach Rice recipes where the spinach is all bright green and fluffy and the rice is brilliant white. That is wrong, and this is not that recipe. If you cook this right the chicken stock combined with the Dill Weed and the carmalized onions will give the dish a nice meaty taste. Click on any picture to bring up the lightbox with captions.

  • Gather ingredients, including olive oil, 1 cup rice, frozen spinach, chicken stock, and Dill Weed.
  • Start by dicing half of a large Vidalia onion.
  • Carmalize the onions in olice oil with Dill Weed.
  • The more carmalized the better.
  • Once carmalized move the onions to the side, increase the heat and fry the rice in more olive oil for three minutes.
  • At the same time place the frozen spinach on the onions to start thawing.
  • Add enough chicken stock to cover.
  • Transfer to the rice cooker and set to cook 'white rice'. You want enough liquid to get really soft rice, and to cook long enough that the bottom of the rice gets crunchy.
  • Finish with a splash of lemon juice. Can also be eaten with an egg over easy and Tzatziki sauce for the best breakfast on planet earth.
