Tzatziki Recipe

My kids have asked me to write up my recipes, but the problem is that for the vast majority of the things I cook are done by eye, so I'm attempting to document them with pictures, starting with my Tzatziki recipe. Click on any picture to bring up the lightbox with captions.

  • Start with a cucumber.
  • Peel it.
  • Cut in half length-wise.
  • Scoop out all the seeds.
  • Grate with a medium sized grater onto paper towels.
  • Sprinkle with salt and wrap the shredded cucumber in paper towel.
  • Use good quality Greek yogurt. Use the tupper-ware you are going to store the tzatziki in as your mixing bowl.
  • Use about half to two-thirds of the container.
  • Crushed black pepper, powdered garlic, dill-weed.
  • Lemon juice and a little olive oil.
  • Squeeze out the juice from the shredded cucumber in the paper towel into the sink and add the dried shredded cucumber to the mixture.
  • Mix and let refrigerate at least an hour.
